Pasteurisation The heating system supplies hot water, which, through the circulation pump, is sent to the water jacket of the selected tank in order to reach pasteurisation temperature of 85°C.
Homogenisation Once the pre-set pasteurisation temperature has been reached, the mix is sent to the homogeniser via a centrifugal pump, which, given its high pressure of 200 bar reduces the fat globules into tiny particles to prevent fat separation and to obtain an excellent structure of ice cream.
Cooling From homogenisation, the mix directly moves on to the first section of the heat exchanger where it is cooled with water from the cooling tower at 34°C. It then passes through a second section where it is cooled further with ice water in order to obtain the final temperature of 4/6°C of the mix. The mix is automatically sent to maturation tanks where it will stay for approximately 6 hours before it is ready to use for ice cream production.
